Simple & Easy, Chicken Breasts with Avocado & Tomato Relish
A really simple and healthy dinner ready in 20 minutes! Serve with a simple green salad.
2 chicken breasts, sliced in half horizontally
salt & pepper
1 tablespoon extra virgin olive oil or butter
2 avocados, thinly sliced
fresh parsley to garnish
Make sure each chicken breast is the same thickness, flatten with a rolling pin or glass jar if needed. Season with salt & pepper.
Heat a frying pan large enough to fit the chicken in a single layer over medium-high heat. When hot, add the olive oil or butter and swirl pan to cover. Reduce heat to medium, add chicken breasts and cook undisturbed for 1 minute. Flip each chicken breast over and reduce heat to low. Cover with a tight-fitting lid and cook for 10 minutes without lifting the lid.
Remove pan from heat and leave lid on for a further 10 minutes to continue cooking. Remove lid and check there are no pink bits in the chicken, if so return to heat for 1-2 minutes until fully cooked through.
Serve topped with sliced avocado, Crunch Preserves Tomato Relish and fresh parsley to garnish.
