Grilled Fish with Jalapeno & Avocado Relish
Spice up your fish and chips with this really easy jalapeno and avocado relish.
INGREDIENTS
1 avocado
1 small cucumber
1 lime, juiced
1 tablespoon Jalapeno Relish
1 tablespoon extra virgin olive oil
4 fish fillets
Steamed rice to serve
Fresh lime wedges to serve
Coriander to serve
INSTRUCTIONS
Remove the seeds from the cucumber, then dice both the avocado and cucumber. Place in a bowl with the lime juice and Jalapeno Relish. Stir gently to combine.
Heat oil in a fry pan over high heat, cook fish for 2 minutes each side or until cooked through.
Serve with rice, a big dollop of relish and garnished with lime and coriander.
